½ cup water kefir grains
3 cups coconut water
Place the kefir grains in a container and add coconut water
Cover the container for 48h and not longer in room temperature
Strain the mixture and pour the liquid into a clean container
Rinse the kefir grains with filtered water and place them into a clean container.
Do a second fermentation for 24h by adding the liquid to the usd kefir grains, an additional fermentation adds more nutrions, more flavours and makes the drink fizzy
Now cool your drink in the fridge and enjoy!
Add fresh fruit juice or berries for flavour
Optional 1 tbs organic raw sugar to aid the fermentaiton process
Pro tip: use a muslin cloth for your first fermentation and store the coconut kefir water in a sealed container after the second fermentation
